Email reapers and search engine bots

I am building a website - slowly!!. I am told there is code that can be 
added to the headers that will:

1. Prevent email miners / harvesters from reaping email addresses that 
appear in your pages

and

2. another bit of code to stop search engines storing certain pages on
your 
site

Can anyone advise on this (in very simple layman terms!!!)
