I've gotten good use out of O'Reilly's AppleScript in a Nutshell, but I 
suspect that's a bit out of date.

One problem with answering your question is that there can't be a single 
reference that tells you everything given that the underlying mechanism 
can be arbitrarily extended by random developers. If you really want to 
get into it, you're going to need to examine the dictionary (or 
do***entation is available) for the apps you want to control.
